Quick, delicious and flavourful, Monika’s vegan lemongrass curry has been a hit with our Mantra Room crowd for years! With just a few ingredients (and enthusiam!), learn how you can make it yourself at home.
Fragrant Lemongrass Vegan Chicken Curry
Serves 4
Ingredients:
300g mock chicken
1Tbsp vegetarian chicken stock powder
200g red capsicum
100g green beans
100g lemongrass paste
1Tbsp turmeric powder
1Tbsp black pepper
2 fresh chillies
2 garlic cloves
3 kaffir lime leaves
Sauce: 1 Tbsp miso paste
2 Tbsp soy sauce
1 Tbsp brown sugar (optional)
1 tsp vegetarian chicken stock powder
Method:
Fry mock chicken with vegetarian chicken stock powder until crispy and golden. Add garlic, chillies and vegetables. Mix well and cover with a lid. Cook for a few minutes, but make sure the vegetables are still crispy. Prepare the sauce with miso, soy sauce, vegetarian chicken stock powder, kaffir lime leaves, black pepper and turmeric in a cup of water. Add sauce to the vegetables and bring to the boil. Serve with rice.
